Hmm...sounds like how I do my once-baked potatoes...only we don't eat the skins - lately I just scoop all the potato out and mix the butter, sour cream, salt, pepper, bacon bits, cheese (usually shredded sharp cheddar) and - my only deviation from this recipe - green onions together in a bowl, then serve like that. No second bake - does it make much of a difference in flavor to reheat all the ingredients?
