That was only for the 2007-08 season so they could get all the newly designed edge jerseys out and in the market. As of right now it is confirmed that 8 clubs will be wearing a third jerseys in 2008-09. Those clubs would be the Bruins, Flyers, Sabres, Oilers, Kings, Pens, Sharks and Blues.

More may be announced/confirmed soon, suposedly the Rangers wanted to have one in 08-09, but now that the outdoor game has been put on hold, they may wait a year if they can get it in 2010 and unveil it then. (or at least, that would be my guess) What makes me think this is that the Jerseys the pens will be wearing are the same ones they wore on for the Winter Classic, as well as Buffalo I believe.
