There is always the classic teaching guide "The Hockey Handbook" by Lloyd Percival. It has been revised by Major, Sadler, and Thom. New format edition published in 1997 by McClelland & Stewart.

It has detailed sections on skating, puck control, scoring goals, offensive strategy and tactics, defensive strategy and tactics, goaltending, practice organization and coaching technique, and training.

Also, if you are looking for a fun read try Dave Bidini's "Tropic of Hockey". Probably better known as a rhythm guitarist for the band the Rheostatics. Book is about him as a rec league player traveling the world and playing hockey in unusual places: China, United Arab Emirates, Transylvania, the 8th story of a shopping mall in Hong Kong.
