You wrap tape around the shaft multiple times to build up the thickness where you want it, you twist the tape into a cord and wrap it around for the ridges, and to get more pronounced ridges you build them closer to your top layer of tape. For softer ridges you have a looser cord, for a harder ridge you spin it tighter.

Some guys are really picky about grips. Some NHL guys have been known to carve wooden extensions to an odd shape, tape them up and transfer them from stick to stick. It's an art, not a science. Everyone has a different preference.
