GPP = General Physical Preparation.
CrossFit is great for whipping yourself into good shape, but it is not sport specific. I imagine that, unless you're a pro-level hockey player, you're probably going to benefit from CrossFit.
As for whether doing that on top of your own program is overtraining... well... I can't help you much there.
Are you playing at a high level? How many practices per week do you have? How many off-ice training sessions per week?
I kind of want to give CrossFit a try, but it sure isn't cheap!
