You're forgetting a couple things:
1) Tourists. You might definitely be able to get a significant number of tourists to show up for game (especially if their team is playing). Granted there are a ton of attractions/shows to choose from, but they should still be able to get a significant number of seats sold.
2) Betting. There's nothing Vegas loves more than seeing stuff they can bet on.
I think hockey might be the fourth most desired sport behind the ones you mentioned, but if hockey is there first (and is the only thing there), it won't matter. If hockey is the only option, even if they'd like the other sports better, they're going to go see hockey. I don't think the other sports are too interested in Vegas.
The only question about Vegas is venue. If they need to build an arena, the current economy is going to squash any thoughts of that unless it's privately financed. Although that could make a lot of sense--they get a hockey team for 41 dates and can use the arena for shows/concerts/etc. the other days.
