I think the biggest thing is Hanukkah (Chanukah? How the hell do you spell that anyway?), especially around here (Newton/Brookline have very large Jewish populations). And I think it's more a matter of companies saying "We want EVERYONE'S money", rather than "Oh, don't offend the <insert group here>."

Actually, looking up the "Happy Holidays" song on wikipedia indicates it dates to a 1942 Bing Crosby movie (Holiday Inn), and was sung in the movie on New Year's day. It was intended to cover multiple holidays throughout the year, so thus "Happy Holidays". So it appears it didn't start out politically correct, and has been adapted over the years as we've accepted the fact that Jews and black people are humans too in this country.

And it's not like anyone could say the 1940s were exactly politically correct.
