EDIT: I did cruise your "Visitor's guide to Philly" thread but didn't find anything really directly pertaining to this.
The best Philly cheesesteak (and this is what Philly natives will say) is Jim's on South Street. I highly recommend it. Or, if you like chicken cheesesteaks, Ishkabibble's on South Street.
In terms of bars, to avoid the college crowd, go out in Olde City - tons of good spots there.
