I've heard something similar, about the goalie not being able to pick up the all white stick as easily as the black one. To me that would make more difference than tape color.

My mini-theory is that all white tape might hide the angle of the blade for the release a lot better than black tape would hide the position of the puck.

Also, if you go on YouTube and look at videos of goalies with the helmet cam, it's pretty easy to see the puck no matter the tape color.
