The record for the most PIMs in a GHHT game that I can find isn't Probert, or Shanahan, or Messier. It's Vinny Lecavalier, with 31 (March 17, 2006).

Looks like Owen Nolan may have the record for most points in a game with 6 (1 goal, 5 assists) on March 5, 1992.

And I think Jeremy Roenick has the most goals, with 4 (February 24, 1994).

Most eventful may be (not promising, but might be) Jared Boll, who had 1 goal, 1 assist, and 2 fights in 5:52 of ice time (November 23, 2009).
