I've used both, Ryan more extensively.
Ryan has a great wrister and slap shot. He can snipe corners. He's tough to knock off the puck along the walls or particularly when he's going to the net. He can be poke checked though and because he doesn't have great speed he's best when you are set up and going a little slower in the offensive zone. I was frustrated by how many times he got caught by back checkers after receiving a breakout pass up the wing.
Havlat was really fast and really smooth. I'd say he would classify as a speedster like Grabner but he carries the puck more naturally with smoother dekes and better release.
Basically if you already have speed to carry the zone and you like to slow it down once your there, or if you need a power play beast pick Ryan. If you want a far better breakaway and rush threat choose Havlat. Neither were of particular note in the defensive zone but Ryan was at least pretty good pressuring outlets on the walls.
Does anyone have a C-LW they'd swap for a C-RW or LD-RD?
