I don't know why the education level of athletes matters. School by itself doesn't make you more intelligent or necessarily more knowledgable. Someone goes and takes a degree in Philosophy or Biology or English. What does any of that have to do sports and contract law? And I would dispute that university by itself makes you more mature. IMO, how you're raised has a lot more to do with that.
