Noticed nobody mentioned plain ol Tabasco. I hate that stuff. Their Jalapeņo and Chipotle ones are really good, but the original one just tastes like vinegar.
My favorites are:
Frank's extra hot for Buffalo type chicken things
Valentina, Tapatio, El Yucateco for Mexican
Tabasco Jalapeņo, Tabasco Chipotle, Sriracha are the most versatile I think
A Habanero based Jamaican jerk style one for grilled stuff
I keep a capsaicin based one to just add a neutral flavor heat to stuff like meatloaf or chili.
