Hey there. I've been trying poutines all over Quebec. (I tried the one at Dunn's last night and the sauce was great but the rest not so much).
Cheese curds is the key ingredient. If you can't find them, use some GoudA (or even smoke Gouda) or a mild-cheddar. Home-fries are always ideal, if not you can buy some at your favorite place (they must be crispy or they'll wet pretty fast). Making your own gravy is the way to go (cook some onions and garlic, add chicken, beef or veal broth, the spices you want, some dijon-mustard and flour).
Pimping your poutine is essential to me. Here are some ingredients I like to add:
- Pulled pork
- Smoked meat
- Hot-dogs (or even Pogos ; cook and slice them afterwards)
- ''A Poutine Expos'' (fried onions, green pepper and mushrooms)
You spread the fries in a plate, add cheese and whatever ingredients you like, and you drop the gravy at the last minute.
