Another update:

All the Koreans playing in Finland have now returned to Korea/elsewhere. Not sure about the status of the Korean Mestis project.

Some Canadian-born Koreans are now playing in the Asian Ice Hockey League, and they could be eligible to represent Korea in 2018. These players include previously mentioned Jimmy Kim, a.k.a Ji Min Kim. He's had one assist in four Asian League games so far, after starting the season in OJHL.

In the photo above is another previously mentioned player now playing in Korea, Jung Ahn. He has also already represented Korea in three IIHF-sanctioned international matches. Here's a long, well-written Wikipedia article about him:

Dong Seo, 1994-born forward from Seoul is playing midget hockey in Shattuck St. Mary's highly regarded hockey program. Not completely sure about his national eligibility.
Here's some discussion about Canadian forward Brock Radunske, who's expected to represent Korea in future international matches.
