I just have no idea how they consider the head the principle point of contact.

You can blatantly see Gryba's shoulder hit Eller's chest/shoulder which causes Eller head to snap forward and down onto the top of Gryba's shoulder.

It's in no way the principle point of contact.

It's basically a textbook example of legal incidental contact to the head.
