The absolute best thing to do is to head to your local knowledgeable store and get fitted from scratch. You would need to know size and try on different boots to select based on fit.
I know it's a surprise and all, so perhaps you could purchase something in advance to indicate that a trip to the store is in order. Perhaps an actual pair of skates (which you would anticipate returning of course, so no sharpening or anything should be done obviously lol), or a gift card, or some sort of trinket related to hockey and/or skates?
