My guess is that Sutter switched back to six defensemen because he knew he wouldn't be able to control the matchups. The seven defenders allowed him to tailor the pairing to the situation, but without that capacity he might have tried to opt for a more stable, general approach with three pairs.

The Blues really are the most structurally sound team in the NHL right now. Their defense is so tight, they break out the puck with beautifully, and they have great support in the offensive zone. They ALWAYS outnumber you at the puck.
