The working theory is that you have your power hand on top of the stick to generate harder shots/passes. When you're poke checking, you typically only have one hand on the stick, so if you're right handed.....that means your right hand is on top which means you shoot "left".
Why do all field hockey players shoot right handed then? I'm not sure about this.
