There's also the possibility that it's a shortened version of an much longer old family surname, like Pouliot Dit La Clergerie. Pronunciations in any language have a way of changing over time. If the word following Pouliot in the old surname started with a D, that part of it might have merged in. There's lots of reasons why it might not end up with the pure French pronunciation.
