Does anyone know of any other Defenseman to take faceoffs? Having Chara covering the opposing center right off a defenseive zone draw would seem to make a TON of sense, so has anyone else ever done this?

Yes, waaaaay back when, I recall the Caps once deployed this tactic. I'm sure it was tried prior to that.
