The Varsity? You could consume less grease if you drank it straight up. While those others are great places to visit (especially if there's an air show at Warner Robins), I went with a shopping venue as per the OP's request
If you’re looking for prime malls then hit Buckhead. Phipps Plaza and Lennox both have high dollar stores where you can probably find good discounts at this time of the year, and they’re right across the street from one another.
As far as outlets, I also agree that the Tanger Outlet Mall is a good choice. It’s right off the highway, not an inconvenience at all. (But then again I live on the south side, so I really don't know what outlets are on 75 past the perimeter.)
As another poster said go to the Varsity. Get a Hot Dog, Ring One, and an FO.
If you are just looking for standard, mall-type stores on your way, those Tanger Outlets are the best bet. For the really unique and interesting places to shop within the Atlanta area, you would need to divert from I-75 a bit.

Your best hope is that heart disease kills off the consumer base faster than they can reproduce.
Don't eat at The Varsity.

After Atlanta there are two more outlet malls on 75 before you get to the Tennessee border. So if you miss the Tanger Outlet, don't worry there are two more. The first is in Calhoun and the second ind Dalton.
