Why the Leafs?...

and not the Leaves...as in pl. of Leaf.

Anyone have an answer?

Grammatically speaking, this is what's known as a "proper noun".

Major Conn Smythe thought the name Toronto St Patricks limited their appeal to a small section of the Toronto population. He rechirstened the teams the Maple Leafs because he felt that the Maple Leaf was the national symbol (It wasn't yet on the Canadian flag and the idea for the flag came right off the Leaf's jersey!) He had worn Maple Leafs on his uniform during WWI

Actually, "leafs" is considered an accepted pluralization of "leaf" by certain sources.

Webster's dictionary is one of those sources. Link

This is also true.

We see this with many sports teams. It may shock some people to hear this, but "Sox" isn't really the most commonly used pluralization of the word "sock" either.
