He didn't say Quebecois, he said French. There are lots of French speaking people in other parts of Canada, especially northern Ontario since it's close to Quebec.

Veggie Cajun Chicken sounds pretty tasty. I've been keeping it simple with a variation of Cheese's and the occasional Tomato, Ketchup, Fried Onions, and even Zucchini once....always a plain one on the side for Claude though.
