We can't score, we are on pace to not even make the playoffs, and both of those scenarios are getting worse by the game. Thank you Terry Murray for all you gave this team, but it's time for a change. Best of luck to you and congratulations on a hockey career many of us would envy. Hopefully you achieve whatever you want to achieve in your future endeavours.

Isn't it that as long as it's a promotion, teams are usually willing to let guys go even mid-season? Maybe I have things wrong here, but I thought if an assistant coach got a head-coaching offer teams would nearly always let him go?

Not mid-season no, especially not from the NHL team (assistant coaches). I can't recall a team letting its assistant coach go mid-season to join another team. Farm team coaches are a bit different, but even then, it'd likely only happen if it was an eastern conference team let their farm coach go to the western conference, or vice versa. Like Nashville and Carolina with Muller.
Not to mention the difficulty filling the spot mid-season.

That feels like firing up a barbecue outside the walls of a prison where someone's being executed. I could never do it.
Do the deed, get it over with. Install the new coach. Put this underachieving roster immediately on notice. Any player who still can't get it promptly in gear under the new regime needs a swift ticket out of town.
