I don't think anyone in the NCAA is in the game until they play a game in the NHL/AHL etc.... Licensing issues I believe.
Probably have to wait until the first roster update (granted we have a season)
I just played online for the first time. The first game was pretty normal and fun. The second game I could barely skate with the puck. Anytime I was remotely close to an opposing player, I would get the puck poke checked off my stick with ease. Is this a common thing online?

Yes, very....you need to learn to protect the puck very well.
