Interesting look at how pre-hurricane experienced suppliers laid in extra supplies for restaurants/hospitals, how some (chain) restaurants were able to open almost immediately (with limited menu).

Advancement in JIT deliveries, history, helped with preparations and post-hurricane resupplying.
