Use a lower temp and cook it for a longer period of time. You'll avoid charring and have a more even cook. If you're grilling meat, you could also try cooking the meet in the oven first, and then transfer it over to the grill for a few minutes to get grill marks and that grill flavour.
Speaking of cooking, I'm about to go make some beef stir fry with fresh veggies. Bok-choy, broccoli, carrot, cauliflower, onion, and some garlic.
