Some older ones:

Helen Hunt was Murray's daughter on an episode of the Mary Tyler Moore show.
John Larroquette was Lucy's divorce attorney on Dallas.
Tom Selleck was a passenger in Elaine's cab on an episode of Taxi.
Leah Remini was one of Carla's kids on Cheers.
Lisa Kudrow was one of the Darryl's wives on the last Newhart episode.

He was also on two different shows named "ER".

He was also in the fantastically over-rated Garden State.

Just flipping channels and came across Newsies...I remember at the time it was released the big name in the film was the kid that played Doogie Howser's sidekick Vinny. But now the top name in the description is...a very young Christian Bale.

Max Casella. He actually went on to have a pretty decent career!! Obviously not as big as NPH's or Bale's.. but he was in some noteworthy movies/shows (Boardwalk Empire, The Sopranos, Revolutionary Road, Ed Wood, Newsies)..

Johnny Galecki in Christmas Vacation I just realized that around Christmas 2011.
Much more notable than that, he had a recurring role as Darleen's boyfriend on Roseanne in later seasons.

I know I saw a young Wood in some other movie from the early 90s, buy looking at his filmography I can't recall which one. I saw '98s Deep Impact though, and don't remember him at all

Bought The Muppet Movie for my kids for Christmas...Muppet movies are always great for "hey, I didn't know that person was in that!" This is their original film from 1979 (one of the first movies I remember seeing in a theater, along with The Black Hole, Star Wars: The Empire Strikes Back, and Star Trek 2: The Wrath of Khan). Appearing in this movie were:
Dom DeLuise, Big Bird, Charles Durning, Mel Brooks, James Coburn, Milton Berle, Edgar Bergen (who died around the time the film was released) with his famous puppet Charlie McCarthy, Elliot Gould, Bob Hope, Madeleine Khan, Carol Kane, Cloris Leachman, Steve Martin, Richard Pryor, Telly Savalas, Orson Welles, and Bruce Kirby.

Most surprising, however, is when I saw that Tim Burton (yes, THE Tim Burton) was one of the Muppeteers in the film.

No problem
I only remembered it because I, for some reason, chose him in The Usual Suspects Actor Draft... His IMDB picture shows him with a goatee, and since he has a strong New York accent, I figured it was good enough for Todd Hockney

The bartender in The Shining was head of the replicant manufacturing company in Blade Runner.

The lead singer from Living Color was also in Platoon. Johnny Depp was the interpreter.

Private Upham in Saving Private Ryan has a recurring role as Dickie Bennett in Justified. Won a Best Supporting Actor Emmy for the role.

Vin Diesel, of course, got his acting start as Pvt. Caparzo in Saving Private Ryan.

Eric Roberts had a great supporting turn in one episode of Oz as Richard L'Italien, condemned serial killer.

The guy who did the voice of Stimpy also does the voice of Fry in Futurama.

Mark Hamill does a lot of cartoon voice work. Not that he really has to work much, mind you.

As was Jeremy Piven:

Paul Giamatti & Victor Gerber also make cameos

Also in Tim's Batman Returns, I always thought it interesting that the Penguins parents are Pee Wee Herman and the Diane Salinger who played Simone in Pee Wee's Big Adventure

Actually, just thought of a good one, though it's TV and not movies. Was watching an episode of Rawhide last year (1959-1965 western series where Clint Eastwood starred as Rowdy Yates). Anyway, Rowdy was being forced to marry some hillbilly woman or there'd be trouble for the bunch...something like that.

So as I'm watching I hear the hillbilly father speak...Hey! Wait a second, that voice is unmistakeable! Denver Pyle (Uncle Jessie from the Dukes of Hazzard, as well as, for you real old timers out there, Mad Jack from Grizzly Adams). And then the hillbilly who really wants to marry the woman who Rowdy's being forced to marry speaks up...ANOTHER unmistakeable voice, and it's also related to the first...James Best (Sheriff Roscoe P. Coltrane on same show). Funny how the two ended up on the same series a decade and a half later
