I'm more a fan of the Russian composers for the most part in that regard, as well as Copland and Barber, but that's because I'm a brass player. It's prettymuch the only way that I'm not tacet for over half a symphony.

Ravel and Bizet FTW, but I LOVE Samson et Delilah, so I have to give a nod to Saint-Saens as well.
I'm all about some Russian composers though. I bought a random Rachmaninoff CD several years ago and fell completely in love.
