Umm good question. I guess I will just put all the names into a hat and the teams into another hat and pick one at a time.
Or maybe ask a Mod for help if that would make everyone more confortable.

Plus, how cool would it be to compare the 2 mock drafts after completion. We could compare the teams and ask their fans who they think did the better job.

online.

I thought we could put the names into a hat and draft teams as well. First name out gets to pick their team and so on......

That tends to drag on, but since you are running it it's up to you.
I'd suggest choosing the teams for the people to be honest.
