That's just it -- it may have started out as fruit, but between the sugar/corn syrup and the red food dye, it's impossible to tell if it was cherry or strawberry and all it's doing is making the cake goopy. Blech.

Oh and if we're debating pie and cake, sidebar:

Cake with or without ice cream?
Pie with or without ice cream?

In other news, my daughter has a pinewood derby car in for this weekend. I'm not expecting much as I'm nearly 0.75 oz under weight. I didn't have anything else to use (or so I thought). I was damned amused to see someone using old fashion half dollars screwed to the bottom of their car -- inspired idea.

Ha! I never have ice cream with cake unless it's a separate dish. I have NEVER liked it. And in 40-odd years of refusing it, my mother never fails to ask if I want it at any birthday gathering she's serving at.

Excellent vanilla ice cream on a hot apple pie though? That for some reason appeals to me. Never understood it.

Another ancillary -- pie with a piece of cheese or no? (No, not on top, but a slice to nibble between bites of the pie.)

You sir have clearly never had my wife's apple pie cupcakes or strawberry shortcake cupcakes.

You are right that cake filing is very often done wrong but when it's right it can be amazing.

For sure any filing should be real fruit... No "jelly" crap.

My mother makes an apple pie that has ruined other pies for me. It's my grandmother's recipe and the crust is the perfect blend of crispy/crumbly, the apples are not too firm but not mush, and it's sweet and cinnamony and I can't think of anything I'd rather put in my mouth.

It's also made with our homegrown apples, so it tastes like pride, too.

Mom's apple > ice cream cake > funfetti frosted cake > brownies > frostingless cake > pie > frosted cake. Most cake frosting is so cloying that it hurts to think about.

The best cake in the world used to be from Bluebird Italian Bakery on the West Side - a delightful light, spongecake-like batter with ricotta cheese (canolli filling, basically) between the layers and also as the frosting.

Madre di Dio, I haven't had one of them in 25 or more years...

In all seriousness though she is wanting to start her own bakery specializing in cupcakes and eventually getting into wedding cakes. She has some amazing cupcake recipes already. As my waste line will attest to since I get to eat them when she practices.

Logistically it just isn't really feasible at the moment. We looked into starting online but not really having a good footprint out there she'd still have to work. Doing cupcakes plus almost 50 hours a week would be hard... Not to mention the worry of shipping them with out them being destroyed. A store front just isn't doable either.

First - "waste line" is cracking me up.

Second - my cousin started a "bakery" out of her house. She just goes by word of mouth and it started slow but now she does all sorts of birthdays, communions, holidays. She works full time as a nanny and has two kids as well, but she definitely loves her "bake work". And she makes good money. I spent over $100 on Tay's first birthday cake/smash cake she made....totally worth it though. She even made our wedding cake and favors. YUM!

And there are cupcake businesses already with a foothold in the area. Is she willing to collaborate with someone else? Just thinking out loud, maybe there is a bakery or eatery looking for a cupcake specialist?
