For patatoes make them soak in cold water at least 1 hour after peeling if you make soak longer do it, this keeps the potatoes crunchy and fluffy.

When removing fries from the oil the worst thing you can do it to place them on a paper cloth/towel, what you're supposed to do it throw them in a strainer (like a pasta strainer).

Just friendly tips from a cook.

Made me hungry and home sick..(For a little while, then remembered all that shoveling!!)

Here have to make my own fries also (Crisco pan fries are good, or deep fried) but the Tatters we can find here not the best (Ghana - most come from Burkina Faso - best suited to mashed) Next, yeah no good squeaky curds here...(My favourite are St Albert curds in Eastern Ontario) so go with cubed Mozzarella.

As for sauce, forget it, no canned varieties here. Have to go for scrtch....make a nice browned flower roue, add pepper etc, water, chicken cubes (Yeah, thats cheating) and hope for the best...

Have only done that twice - really is better to wait for the next trip back home for the St Hubert and Poutine fix!!

Yeah for the soaking in water, I usually do that but this was fries on a whim...

The waitresses at the restaurant asked us to leave claiming we weren't allowed to bring pets. He tried to argue with them.. but no one could understand a word with his heavy Acadian accent.


Eventually, Mcphee had to step in and with his usual smooth charm made them accept him inside. Plus, we had a goat there already anyway.

Only one? I was under the impression Mcphee traveled with an entourage of sorts.

Nope. Only one..

The rest are sheep, ducks, and dogs. But the duck is too strong willed to make the trip from (wherever backwater hick town in Ontario he's from)
