It's not like teams throw these in as free gimmicks in contract negotiations. They are worth top dollar for players of certain ages that already have made their fair share of money and know they are in a place they want to stay.

This is pure speculation on my behalf but to throw a ballpark number out there - in the case of the Sedins for example I would put the price tag of the NMC at about $750k per year as a conservative bet.

It also would be interesting to see how many NTCs or NMCs cause their respective teams actual trouble. I think it's not that many and people just tend to take the cases in which they do (e.g. because a team had the tendency to give them away like free cookies) and consider this the rule rather than the exceptions they probably are.

A limited NMC or NTC can be a fair arrangement for both parties. But an ironclad NM/TC is like a GM getting handcuffed to the bed frame and his "companion" taking off with his wallet.

The only real shock in that group is Ohlund. Given his age and the 5 year deal he signed, you would think he wouldn't have gotten an NMC.

Depends on the length of the deal really. If it's a 7+ year deal, sure. But if it's a five year deal, in the case of the Sedins, it's really not that bad. Management is obviously committed to them, and that likely isn't going to change in the next few years and by that time that contract will already be over half completed.
