So...I'm in charge of dinner tonight and we're having chicken thighs...anyone have any good recipes they wanna share? And whatever it is, it has to be low in sugar.

Yes I do, got this from Emeril and it's fanfreakintastic.

Ingredients:
8 bone-in, skin-on, chicken thighs, about 3 pounds
1/4 cup plus 1 tablespoon olive oil
1/3 cup soy sauce
4 cloves crushed garlic
2/3 cup apple cider vinegar
1/2 cup chicken stock, plus a bit for dissolving arrowroot
1 tablespoon minced garlic
1 large bay leaf
2 tablespoons arrowroot or cornstarch
3 to 4 (6-ounce) Yukon gold potatoes, chopped into 1/2-inch pieces and blanched
Salt, to taste
Aromatic Jasmine Rice, for serving

Method:
Place the chicken, 1/4 cup of the olive oil, soy sauce, vinegar, the crushed garlic cloves and salt and pepper in a large glass bowl. Cover and refrigerate for at least 1 hour, turning once or twice to ensure even marinating. Remove from the refrigerator and pat dry with paper towels. Reserve the marinade.

Place the remaining 1 tablespoon of olive oil in a heavy pot or Dutch oven over medium-high heat. Once the olive oil is hot, place the chicken in the pot, skin-side down. Cook (in batches, if necessary) until it is golden-brown and nicely caramelized on both sides, 4 to 6 minutes. Discard all but 1 tablespoon of the fat in the pan.

Transfer all of the chicken back to the pot and add the reserved marinade, chicken stock, minced garlic, and bay leaf. Add a bit of cool chicken stock to the arrowroot until it becomes a thick paste. Add this to the pot and bring to a boil. Immediately reduce heat to a simmer, cover, and cook until the chicken is tender, 30 to 35 minutes. Add the potatoes during the last 20 to 25 minutes of cooking.

Uncover the pot and discard the bay leaves. Season with salt if necessary and serve the chicken over the Aromatic Jasmine Rice, along with 2 tablespoons (or as desired) of the sauce.

You can do the fancy rice part or just any old rice, I did it with plain brown rice and it was great.

This was found during my unemployment days, one of those when I'm watching cooking shows and said, "Holy crap i can smell that through my TV, I'm making that **** tonight!"

As soon as I become a certified NJ teacher, I'm going through my fb account with a fine toothed comb. I think the pictures of me trying to push a 30 pack box into a Newark Penn station garbage can will go.

do something with a mesquite spice and some lime, grilled.

Man do I hate the first work day of daylight saving time. It's 5 o'clock, it's *** dark already. I looked up and saw how dark it was and said, "Oh wow, I'm here way to let, I should start packing up" look at my clock and it's freaking five. Still have a good hour left here.

I have no idea about the time of day if I don't get up from our IT Office. It's really weird when you have to stay overnight for stuff...

I used to love the overnights when I worked in Jersey City. Top floor of a 40 story building facing downtown Manhattan. Sunrise there was AWESOME.

You suck. That actually sounds really cool.

I've seen 3-4 really awesome sunrises.

1) San Diego California. Well, actually Poway. One top of a hill basically adjacent to the San Diego Wild Animal Park. My uncle lived there, and I was there when I was like 14-16 a few times, and I always remember that as being an awesome time.

2) Walking on the beach with my iPod in the Dominican Republic. Really vivid colors. Nothing else really special about it.

3) Driving to Lincoln Nebraska. When you're heading due West and driving ~80MPH, the sun creeps up behind you for so much longer. It's really surreal.

4) In a plane flying home from San Diego. The curve of the earth makes the sun rise just slam into you.

I'm a substitute teacher in the town I live in. I've drank with kids at night that I had subbed earlier that same day, and drank with kids at parties then showed up as their sub at a later date. My FB is the least of my worries.

I love watching sunsets and sunrises. I think the most amazing sunrise I ever saw was from on top of a mountain in Acadia national park. My favorite sunsets by far were the ones I watched over Lake Michigan.
