I'm not sure if anyone knows the answer to this but I'm almost positive that I remember hearing Kopitar interviewed during his first season and asking about the pronounciation of his name and I believe it is supposed to be pronounced Ko-pee-tar.

Then there's Hjalmarsson pronounced "jalmarsson"
And of course "Norstrom" pronounced "Nordstrom" and "Cammalleri" pronounced "Calamari"
Byfuglien takes the cake though... how they get "Bufflin" out of that...
